A: Water (H2O) is mixed with cooking oil in our commercial deep fryer (DF) to thoroughly filter out the residue, saturated fat and then re-hydrates the oil back with 2% of water. This is our Fizzling Procedure. Q: How could water be mixed with oil? A: Fizzling Procedure is a daily or periodical cleaning process that is specifically used for all H2Oil DF Series. Water is used to agitate all the unwanted elements in the oil and naturally bring them down to the bottom of the water tank. Then the oil is separated from water to form its own condition and have the oil float over water. For example, if the weight of water is 1g, the saturated fat is .9-.95g and the oil is .6g (of the same amount) so anything that is lighter than water would float and anything heavier than water would drown to the bottom of water tank. Q: How is it possible to save 5 times or more on cooking oil? A: Through our daily Fizzling Procedure, draining unwanted residue in the oil tank, invisible saturated fat and very small particles like seasoning powder, and rehydrating cooking oil will maintain the optimum frying range of oil (approximately in the 20% TPM) for a longer period. So the oil will last longer. Q: Do I have to use certain kind of cooking oil in this fryer? A: Based on tests and case studies from our buyers, we did not find any issues with using different kinds of cooking oils. Many Asian restaurants are using peanut oil and other types of restaurants use canola oil. Even some light-creamy cooking oil worked just fine, but we do not recommend any oil that may coagulate because of hardening of fats in the cool zone of the fryer vat area can hold the residue falling into the water tank area. Contact us when beef tallow, duck fat, solid shortening are used. Q: What makes the gas saving of 40% possible? A: Our patented Metal Fiber Burner Technology is designed to use less gas whether it is natural gas (NG) or liquid petroleum gas (LPG)/propane because it is pre-mixed with air 1 to 1 ratio before the combustion stage. 3 PATH Heat Exchange System maximizes heat efficiency which leads greater savings in gas cost and consistent boosting of heat to the oil tank without emitting harmful gases as the burn rate is 90-93% (less than 10PPM on CO gas). Compare your gas bills and see it for yourself. Q: Does your electric deep fryer save electricity? A: Yes. Our UE1100 and UE1100-3 / 60lbs./17 kilowatts and 70lbs./20kilowatts of power consumption respectively without lagging any power to fry large quantity of food. It is still the top-ranking Energy Star Compliant deep fryers in the market. Q: I own a very busy restaurant and I am concerned with “recovery time.” Would this fryer with low BTU be able to handle cooking a high volume of fried food in my restaurant? A: Since our Metal Fiber Burner (MFB) Technology is so new and not familiar to many operators, it can be puzzling when compared to other specifications. Our 42,000BTU fryer is equivalent to 120,000BTU of conventional burner fryer. Although our MFB’s initial intake of thermal energy is about 4 times greater, but the heat is controlled and diffused in the tubes to lower temperature and disburse the heat to all area through the tubes quickly so the recovery time is greater. A: Our fryer’s burner system minimizes exhaust gas heat to sustain optimal kitchen temperature. Therefore, when you stand in front of the fryer, the heat is not coming out of the oil tank and through the vent. Put your hand over the flue vent (although we don’t recommend it) and see how much heat is coming out of it. You can be the judge. Another benefit is that our burner emits very low PPM levels of Carbon Monoxide and Nitrous Oxide. And last, but not the least is that cleaning procedure has never been easier because you don’t have to scrape off the oil tank (our oil tank never burns anything) which you will save time, money and labor. |

A: We believe that the cleaner the oil, the better the taste of food. Due to 2% hydrated oil condition and faster recovery time of frying will produce fried food that is tender and juicy inside and crispy golden outside. As all the fat, residue and even micro-debris from spices and seasons will go down to the bottom of water tank and not remained in the oil tank, this makes your food fry golden brown and delicious, perfect for serving. You may not believe it, but we fried fish fillet, shrimp, clams, oysters, french fries, chicken wings and onion rings in a same vat at the same time and guess what? They all taste great without contaminating the smell or taste of other distinct flavors to another. Q: What types of deep fryers do you have? A: SAPIDUS has 3 types of H2Oil Series deep fryers—Natural gas, propane and electric heat element. It was a challenging task for us to build the H2Oil system into the different types of heating units. Natural gas and propane are in a similar category so our Metal Fiber Burners (MFBs) have been incorporated well into the design. While the Electric heating element being a totally different method, many design changes have been made to the fryer in order to obtain the best results possible. The application of the electric heating element is another component creating energy savings that we are very proud of. Q: How could I purchase your fryers? A: We are currently selling the 42,000 BTU UG1100 (Natural and LPG gas), 47,000 BTU UG1100-3, and newly upgraded UE-1100/UE1100-3 (Electric) model is available since 2022. A: No. Our fryer is designed, patented and certified so that it is safe, compliant and convenient to use and to maintain. There are no complicated or sensitive components in our equipment. Also, all of our equipment has warranties and with optional warranty programs and loaner programs so you will not have any down time of operation. Some dealers may have their own special service plans just for you. Q: Who should I call for servicing your equipment? A: In Asia, many fried chicken chain restaurants have used the earlier and Asian versions for many years.
